Spring brought a new wave of colour to Pret, with a bright and vibrant menu featuring beautiful ingredients and innovative recipes suitable for vegetarians and vegans. Each one as exciting as the next and probably the most instagrammable lunch that won’t require breaking the piggy bank.
The new menu includes a trio of new veggie boxes.
Sweet Potato, Falafel & Smashed Beets Veggie Box. This colourful vegan salad is loaded with turmeric & sweet potato falafel, smashed beetroot humous, avocado, broccoli, pomegranate seeds and edamame beans, on a bed of brown rice & red quinoa. Finished with a pot of zingy green dressing.
Super Beans, Broccoli & Turmeric Cauli Veggie Box. A filling vegan salad with turmeric-roasted cauliflower, broccoli florets and Pret’s mix of fava beans & split peas, combined with roasted butternut squash, pomegranate and mixed seeds. All served on a bed of mixed brown rice & red quinoa with a pot of ginger & turmeric dressing.
Roast Beets, Squash & Feta Veggie Box. This Veggie Box combines roasted baby beets and butternut squash with diced feta, spinach and a mix of seeds, including hemp seed, linseed, buckwheat and pumpkin seeds. Served on brown rice & red quinoa and finished with pot of French Dijon dressing.
Super-Veg Rainbow Flat Bread
This colourful flat bread pairs red pepper, edamame, spinach, pickled cabbage & carrot slaw, coriander and a dollop of coconut yoghurt with vegan sambal paste for a zingy, slightly spicy kick.
